warm winter salad with honey mustard dressing

ready for a recipe from the health nut?

well you’re in for a good one. i got the idea for this from here. of course, i had to adapt it because i never follow directions, but this was more of an idea than an actual recipe. i also made my dressing a little thinner. you can choose which one you like best.

i loved this because i had been craving salads for like a week before i found this. but every day that i had one planned, i would be freezing cold at lunch and want to eat something warm. that’s what make this great. cool crispy lettuce, and warm meat, veggies, and an egg.

i never even thought about eating an egg on salad {besides hard boiled} and it was delicious! give it a try, i think you will like this!

warm winter saladwarm winter salad {egg}dressing:

{ingredients}
1/8cup honey
1/8 cup yellow mustard {me} or dijon {original}
1/4 olive oil
pepper {fresh ground if you have it}

{steps}
1. mix all ingredients thoroughly {and anytime you use it again, it will separate}.
2. store in the fridge for up to two weeks.
3. if it’s too think, add more oil. i like mine more dressing-y than vinaigrette-y. so this is mine. go to the link up there for more vinaigrette-y.

salad:

{ingredients}
1 tbsp coconut oil or olive oil
2 chicken breasts, cubed or sliced {however you like it}
1 bell pepper or 4-6 minis {i like the sweet minis}, sliced
3 green onions, sliced
salt, pepper, garlic, lemon pepper {not good with amounts, use what you like! …wink…}

4-6 small mushrooms, sliced

4 eggs

romaine lettuce
spinach

{steps}
1. heat oil and add the next four ingredients. cook til meat is finished and set aside.
2. saute mushrooms and set aside.
3. fry the egg over medium {unless you don’t like runny eggs, then just go solid}.
4. top lettuce and spinach with the warm ingredients right before serving {otherwise the lettuce might wilt if you put them on much earlier}.
5. drizzle on the good stuff!

serves 4.

and there you have it! A delicious, unique, not.so.cold.and.summery salad!

    • Tehehe. That is my worst mistake. It’s usually getting on pinterest when I’m hungry. Huge uh-oh! Haha I’m glad you like it. I was hesitant to try, but I love it.
